Today, we’re hearing of another new opening coming soon to Disney Springs.

Downtown Disney Springs Village Marketplace Causeway 2

Scott Joseph’s Orlando Restaurant Guide is reporting that George Miliotes is slated to open a wine bar in the near future at the shopping and entertainment district.

According to Joseph, Wine Bar George is the working name of the new spot, which is currently planned for a location just across from Jock Lindsey’s Hangar Bar. This wine bar would join other niche shops along this new stretch, which include Joffrey’s Tea Traders Cafe, Vivoli Il Gelato, and the recently-opened Ganachery.

The project is still in the development stage, so the opening date is still up in the air. However, it is clear that the wine bar will be an independent business, rather than a Disney-sponsored spot.

Miliotes, together with Chef Clifford Pleau, helped to put Disney’s California Grill on the culinary map. The two were at the restaurant’s helm when it opened in 1995, and they helped to make it a destination to locals as well as guests vacationing at the Walt Disney World Resort. In 2002, Miliotes and Pleau departed Disney to work for a local restaurant group.

Miliotes is one of only 3 certified Master Sommeliers in the Central Florida area. Currently, he conducts wine education classes locally for others who are seeking sommelier certification, and wine education promises to be a unique aspect of the new venue.

As information continues to develop about this newly-announced spot, we will keep you posted!
