Pixar Fest fans, it’s time to try our luck at one of the more intriguing Fest eats: Color-Changing Noodles! When this one was announced, we couldn’t wait to make some monster magic — and we hoped they’d be as tasty as they were unusual!

So naturally we headed straight for Lucky Fortune Cookery to get our scary little paws on this festival dish!

Even though the start of this dish is the color-changing magic, they’re billed as Chilled Noodle Salad — and they’re inspired by none other than our friends at Monsters, Inc.! Of course the salad is more than just noodles; also included are Herbaceous Preserved Plants, Sweet and Spicy Vinaigrette, Crushed and Toasted Peanuts with Mint, Thai Basil, Shredded Daikon (a type of radish), and Carrots.

You’ll notice there’s also a wedge of Lime — and that’s uber important to the dish! We love the combination of fresh flavors and those crunchy peanuts. And the daikon adds a little something unexpected.

The noodles are a pretty shade of blue — totally James P. Sullivan-approved! But what do they look like with a little spritz of that lime wedge?

That’s right: they’re Randall Boggs-purple! The slightly translucent nature of the noodles only adds to the Monsters vibe! And we really love the color change.

And thankfully, the flavors in the Chilled Noodle Salad make it a sleeper hit — even without the allure of the color-changing noodles! Get this!
