But when the hotel reopened, some dining options remained closed upon the initial reopening. Gran Destino Tower at Disney’s Coronado Springs Resort But today, we have news of an additional dining spot at Coronado Springs Resort that will be serving guests again soon. El Mercado de Coronado, the primary Counter Service location for Coronado Springs, is now showing upcoming operating hours on the Walt Disney World website! El Mercado de Coronado is listed for hours once again starting on Friday, December 18th from 7AM to 10PM! El Mercado de Coronado page screenshot on Walt Disney World website Currently, we are finding menus for Breakfast and Dinner, while Lunch, for now, is not posted with its own individual menu (and we’ll explain more of what we’re finding as we go). And right now, all entree items are listed as Grab and Go. But let’s take a look at what guests can enjoy starting — and ending — their day at Coronado Springs Resort! El Mercado de Coronado For Breakfast, Hot Grab and Go items will include an Egg & Cheese Sandwich, Assorted Meat, Egg and Cheese Sandwiches and a Bacon, Egg and Cheese Burrito — all served with hash browns. A Breakfast Bowl and MINNIE Waffles will be available, too! El Mercado de Coronado Some of the options which do NOT appear to be returning at this time include Omelets (like the Southwestern, Cheese and Ham, and Veggie versions), Biscuits and Gravy, Grande Fiesta Eggs, and the Pancake varieties (such as Buttermilk and Lemon Blueberry). Oh, and those Minnie Waffles seem to have taken the place of Mickey Waffles, too. (I’m sure Mickey won’t mind for his best gal!) Now, we’ve noticed some items from the Fresh Grab and Go choices that are definitely closer to Lunch options, even though they’re listed under the Breakfast menu. So you very well might be able to grab one of these for a midday meal. El Mercado de Coronado Options will include Sandwiches like Smoked Turkey and Bacon, Smoked Ham and Swiss, and a Tuna Salad Wrap. Salads will include a House, Blue Cheese Wedge, Chicken Caesar, and a Chef Salad. Missing from the daytime list are the Pizzas including unique options like Chorizo and Potato, Ham and Cheese, and the Vegan Pizza. Grab and Go Snacks will include cut and whole fruit and an assortment of pastries including Brownies and Danishes, Donuts, Cookies, Croissants, Muffins, and — of course! — Cupcakes! El Mercado de Coronado And the Coffee Station will feature seasonal options like a Peppermint Mocha and White Chocolate Mocha among the offerings. For Dinner, those same Fresh Grab and Go Sandwiches and Salads and Snacks mentioned above will continue to be available for the evening. In addition, the Hot Grab and Go station will feature a Meatball Parmigiana Sub and Chicken Tender Basket for Dinner. Kids’ items will include Dino Chicken Nuggets (LUCKY!), Mac & Cheese, and Cheese and Pepperoni Pizzas. And, in addition to the coffees, be on the lookout for some later-in-the-day drink options, too. Margaritas will be available, featuring Mango, Strawberry, and the Fiesta Margarita. CHEERS! At press time, El Mercado de Coronado has hours posted as far as the Disney dining calendar dates go out (which is February 22nd, as of this writing).
